Soupy noodles are my favorite. After having the instant ones like Maggie and Top Ramen for a long time I wanted to make something from scratch. Well, it's not made entirely from scratch - I didn't add any flavor enhancers, so that is considered as 'making from scratch'. After looking at several recipes and not able to finalize one, I just said, "F**k it, I'm gonna make my own." So, here's my version of it.
Preparation Time: 30 minutes
Ingredients:
Noodles - Any flavor (I have used egg here)
Chicken - Required quantity
Lemon Basil - A small bunch
Mushroom - As required
Ginger - Small piece
Garlic - 4 to 5 cloves
Red Chilly - Depends on how hot you want
Onion - Large 2 no.s
Salt
Method:
1. Pressure cook Chicken, onion, garlic, ginger and red chillies together with required water, for 4-5 whistles. Add little salt when cooking.
2. In a large pot, add 1tbsp of vegetable oil and sauté the lemon basil in it.
3. Add mushrooms and sauté them for 2-3 mins.
4. Add all the pressure cooked items and the noodles and let it boil on medium flame for 15 mins.
This way, the noodles absorbs the chicken flavor. The lime basil add a citrus-ey kick to the noodles and the aroma is simply awesome.
That's lemon basil on the top.
